Chain Breaker is a distinctive, barrel-fermented white blend from Post House Vineyards, crafted from equal parts Chenin Blanc and Verdelho. Vinification
Grapes are hand-harvested in early morning to retain freshness and prevent oxidation. Only fully ripe Chenin Blanc and Verdelho grapes are picked, with attention to phenolic ripeness and balanced sugar-acid levels.
Grapes are gently crushed and allowed brief skin contact (1–2 hours), which enhances texture, aroma, and complexity without extracting bitterness. The juice is transferred to oak barrels (mix of French andr American oak barrels) for natural fermentation using wild/native yeasts.
The wine is typically fermented at cooler temperatures (~15–18 °C) to preserve delicate aromatics while developing body and richness. Both varietals are fermented separately and blended later to fine-tune structure and balance.

100% barrel aged in French and American oak barrels.
Around 10% new French and American oak, aged for ten months in 225 L barrels.
After fermentation, the wine remains in barrel on its fine lees (spent yeast cells) for several months. Lees stirring (bâtonnage) is occasionally employed to build creaminess, mid-palate weight, and subtle complexity.
Chenin Blanc and Verdelho are blended post-barrel aging to harmonize acidity, fruit, and texture. Minimal fining or filtration is used to maintain natural character. Bottling occurs after approximately 6–8 months of barrel aging.
